Description

A luxurious Lobster Pot Pie with tender lobster meat, a creamy filling, and a flaky crust, perfect for special occasions.


Ingredients

Scale
  • 1 lb Lobster meat
  • 1 cup Heavy cream
  • 1 cup Chicken stock or seafood stock
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Frozen peas
  • 1 tbsp Fresh thyme, chopped
  • 1 tbsp Lemon juice
  • Salt and Black pepper to taste
  • 2 tbsp Olive oil
  • 2 Pre-made pie crusts
  • 1 medium Egg, beaten

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Heat the olive oil in a skillet, then sauté diced onion and minced garlic until translucent.
  3. Add diced carrots and celery, cooking until softened.
  4. Mix in heavy cream and stock, stirring until well combined, and simmer gently.
  5. Fold in lobster meat and frozen peas; allow to simmer for five minutes.
  6. Stir in thyme, lemon juice, and season with salt and pepper.
  7. Fit one pie crust in a 9-inch dish and fill with the lobster mixture.
  8. Cover with the second pie crust, crimping edges and cutting vent slits.
  9. Brush top crust with beaten egg.
  10. Bake for 30-35 minutes until golden brown and bubbling.
  11. Let rest for 10-15 minutes before serving.

Notes

For a richer flavor, consider roasting the lobster shells before using the flesh.
