A luxurious Lobster Pot Pie with tender lobster meat, a creamy filling, and a flaky crust, perfect for special occasions.

- 1 lb Lobster meat
- 1 cup Heavy cream
- 1 cup Chicken stock or seafood stock
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 cup Frozen peas
- 1 tbsp Fresh thyme, chopped
- 1 tbsp Lemon juice
- Salt and Black pepper to taste
- 2 tbsp Olive oil
- 2 Pre-made pie crusts
- 1 medium Egg, beaten
Instructions
- Preheat your oven to 400°F (204°C).
- Heat the olive oil in a skillet, then sauté diced onion and minced garlic until translucent.
- Add diced carrots and celery, cooking until softened.
- Mix in heavy cream and stock, stirring until well combined, and simmer gently.
- Fold in lobster meat and frozen peas; allow to simmer for five minutes.
- Stir in thyme, lemon juice, and season with salt and pepper.
- Fit one pie crust in a 9-inch dish and fill with the lobster mixture.
- Cover with the second pie crust, crimping edges and cutting vent slits.
- Brush top crust with beaten egg.
- Bake for 30-35 minutes until golden brown and bubbling.
- Let rest for 10-15 minutes before serving.
Notes
For a richer flavor, consider roasting the lobster shells before using the flesh.
