- 12 oz ripe mangoes
- 2 tbsp cold water
- 1.5 tbsp gelatin or 1.5 tsp agar-agar powder
- 1.5 tbsp white granulated sugar
- 0.54 cups coconut milk (full fat)
- 4 tbsp evaporated milk or additional coconut milk
Instructions
- Prepare the Mango Puree by blending diced mango chunks until smooth. Strain if desired for extra smoothness.
- Activate the Gelatin by combining cold water and gelatin, letting it sit for about 5 minutes.
- Mix the Base by heating sugar, coconut milk, and mango puree in a saucepan until smooth.
- Dissolve the Gelatin by stirring it into the saucepan mixture without boiling.
- Transfer the mixture into individual molds or serving bowls.
- Chill the pudding for at least 6 hours, preferably overnight.
- Serve with a splash of evaporated milk or coconut milk on top.
Notes
Choose ripe mangoes for the best flavor. Refrigerating overnight will enhance texture and taste.
