Ingredients

  • 12 oz ripe mangoes
  • 2 tbsp cold water
  • 1.5 tbsp gelatin or 1.5 tsp agar-agar powder
  • 1.5 tbsp white granulated sugar
  • 0.54 cups coconut milk (full fat)
  • 4 tbsp evaporated milk or additional coconut milk

Instructions

  1. Prepare the Mango Puree by blending diced mango chunks until smooth. Strain if desired for extra smoothness.
  2. Activate the Gelatin by combining cold water and gelatin, letting it sit for about 5 minutes.
  3. Mix the Base by heating sugar, coconut milk, and mango puree in a saucepan until smooth.
  4. Dissolve the Gelatin by stirring it into the saucepan mixture without boiling.
  5. Transfer the mixture into individual molds or serving bowls.
  6. Chill the pudding for at least 6 hours, preferably overnight.
  7. Serve with a splash of evaporated milk or coconut milk on top.

Notes

Choose ripe mangoes for the best flavor. Refrigerating overnight will enhance texture and taste.
