- 1 cup butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup all-purpose flour
- 2 tsp. baking powder
- 2 tsp. cornstarch
- 2 Tbsp. food-grade matcha powder
- 2 Tbsp. water
- 6 oz. cream cheese, softened
- 2/3 cup granulated sugar (for frosting)
- Pinch of kosher salt
- 2 cups cold heavy cream
- 2 Tbsp. powdered sugar (for garnish)
- 1/2 tsp. food-grade matcha powder (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease two 8-inch cake pans generously with cooking spray and line them with parchment paper.
- In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3 to 4 minutes.
- Add egg yolks to the butter-sugar mixture and beat until thoroughly combined.
- Whisk together flour, baking powder, cornstarch, and matcha powder in another bowl until well blended.
- Gradually fold the dry ingredients into the butter mixture, adding water if necessary to achieve a smooth batter.
- In a separate bowl, beat egg whites until soft peaks form. Gently fold the egg whites into the matcha batter.
- Divide the batter evenly between the prepared pans and bake for 17 to 19 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool completely in the pans.
- For the frosting, beat cream cheese, granulated sugar, and salt until well combined. Gradually add heavy cream, beating until medium peaks form, about 5 minutes.
- Assemble the cake by placing one layer on a serving tray, spreading half of the frosting on top, adding the second layer, and spreading the remaining frosting over it.
- Garnish with a dusting of whisked matcha and powdered sugar.
Notes
This cake can be made ahead of time and stored in the refrigerator due to the cream cheese frosting. Wrap portions tightly in plastic wrap for freezer storage.
