Description
Delightful Mediterranean-inspired crisps filled with sautéed spinach and tangy feta cheese, all wrapped in crispy phyllo pastry.
Ingredients

- 1 sheet of phyllo pastry
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup ricotta cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Sesame seeds for sprinkling (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté the minced garlic until fragrant.
- Add chopped spinach and cook until just wilted, about 2-3 minutes.
- Remove skillet from heat, mix in feta and ricotta cheese, and season with salt and pepper.
- Lay phyllo pastry on a prepared baking sheet and cut into 4-inch squares.
- Place a spoonful of filling in the center of each pastry piece and fold to seal.
- Brush each pastry lightly with olive oil to ensure a golden finish.
- Sprinkle with sesame seeds if desired.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
Keep unused phyllo pastry covered with a damp cloth to prevent it from drying out. Feel free to customize with your favorite herbs.
