Description

Delightful Mediterranean-inspired crisps filled with sautéed spinach and tangy feta cheese, all wrapped in crispy phyllo pastry.


Ingredients

Scale
  • 1 sheet of phyllo pastry
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sesame seeds for sprinkling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the minced garlic until fragrant.
  3. Add chopped spinach and cook until just wilted, about 2-3 minutes.
  4. Remove skillet from heat, mix in feta and ricotta cheese, and season with salt and pepper.
  5. Lay phyllo pastry on a prepared baking sheet and cut into 4-inch squares.
  6. Place a spoonful of filling in the center of each pastry piece and fold to seal.
  7. Brush each pastry lightly with olive oil to ensure a golden finish.
  8. Sprinkle with sesame seeds if desired.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Keep unused phyllo pastry covered with a damp cloth to prevent it from drying out. Feel free to customize with your favorite herbs.
