Description

A charming mini cake featuring rich chocolate and tart raspberry jam, perfect for parties and celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 cup brewed coffee
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup sour cream
  • 1/2 cup dark chocolate chips
  • 4 Tbsp butter, softened
  • 2 oz cream cheese, softened
  • 2 cups powdered sugar
  • 3 Tbsp raspberry jam
  • Red food coloring

Instructions

  1. Preheat your oven to 350°F. Line a 9-inch cake pan with parchment paper and lightly grease with cooking spray.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and kosher salt.
  3. In another bowl, whisk together the brewed coffee and both types of sugar until dissolved.
  4. Add the vegetable oil and sour cream to the mixture, then whisk until combined.
  5. Pour wet ingredients into the dry ingredients, whisk until just incorporated, and gently fold in dark chocolate chips.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely.
  8. To make the frosting, beat together softened butter and cream cheese until smooth. Gradually add powdered sugar, mixing until free of lumps, then stir in raspberry jam.
  9. Optionally, tint half of the frosting with red food coloring.
  10. Invert the cooled cake onto a cutting board and cut out three circles using a 3.5-inch round cookie cutter.
  11. Layer the cake with frosting between each circle and decorate the top as desired.

Notes

Store leftovers in an airtight container at room temperature for up to three days, or freeze for longer storage.
