- 1/4 cup Butter (melted and cooled)
- 1 teaspoon Vanilla extract
- 1 Egg
- 1/3 cup Granulated sugar
- 1/2 cup Brown sugar
- 1/2 teaspoon Kosher salt
- 1/2 cup Greek yogurt
- 1/2 cup Cocoa powder
- 1 1/2 cups Canned pumpkin puree
- 1 cup Flour
- 1 teaspoon Baking soda
- 1 cup Chocolate chips
Instructions
- Preheat oven to 180°C (350°F) and prepare a loaf pan by lining it with parchment paper.
- In a large mixing bowl, blend pumpkin puree, Greek yogurt, vanilla extract, cooled melted butter, kosher salt, egg, granulated sugar, brown sugar, and sifted cocoa powder. Whisk until velvety.
- Add flour and baking soda, mixing until just combined.
- Fold in chocolate chips until just incorporated.
- Pour batter into the loaf pan. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
Notes
To store, wrap tightly in plastic or keep in an airtight container for up to 3 days at room temperature or a week in the fridge. Can be frozen for longer storage.
