- 1 1/2 cups mashed bananas (overripe)
- 85 g butter (melted)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 teaspoon kosher salt
- 2 teaspoons vanilla extract
- 1/2 cup Greek yogurt
- 2 eggs
- 1 2/3 cups all-purpose or cake flour
- 1 teaspoon baking soda
- 3/4 cup Nutella
Instructions
- Preheat your oven to 180°C (350°F) and prepare a loaf pan by lining it with parchment paper.
- Mash the ripe bananas in a large mixing bowl until pudding-like.
- Add eggs, kosher salt, vanilla extract, both sugars, yogurt, and melted butter, whisking until combined.
- Gradually mix in the flour and baking soda until just combined.
- Pour the batter into the loaf pan and swirl Nutella on top.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Let cool for at least 30 minutes before slicing.
Notes
Serve warm with ice cream or toasted with butter. Store sliced sections in plastic wrap for freshness.
