Description

A comforting bowl of Mongolian Ground Beef Noodles featuring savory beef, crunchy vegetables, and al dente noodles, perfect for busy weeknights.


Ingredients

  • 8 oz dried noodles (spaghetti, ramen, or linguine)
  • 1 lb ground beef
  • 1 tbsp vegetable oil
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1/4 cup brown sugar
  • 3 garlic cloves (minced)
  • 1 tsp ginger (freshly grated)
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup beef broth
  • 2 tsp cornstarch (mixed with 2 tsp water)
  • 1/2 cup shredded carrots
  • 3 green onions (sliced thinly)
  • Sesame seeds (for garnish, optional)

Instructions

  1. Cook the noodles in boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat and brown the ground beef.
  3. In a small bowl, whisk together the soy sauce, hoisin sauce, brown sugar, minced garlic, grated ginger, and red pepper flakes.
  4. Add the beef broth to the sauce mixture and combine it with the browned beef in the skillet. Let it simmer.
  5. Introduce the cornstarch slurry to the skillet and cook for 2-3 minutes, stirring until it thickens.
  6. Toss the cooked noodles and shredded carrots into the skillet, mixing well to combine.
  7. Serve in plates and garnish with green onions and sesame seeds, if desired.

Notes

For a lighter version, consider substituting ground beef with ground turkey or chicken. Add more colorful vegetables for added nutrition.
