Ingredients

Scale
  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Buttermilk
  • 1 cup Sweetened shredded coconut
  • 1/2 cup Sweetened condensed milk
  • 1/2 cup Unsalted butter (for frosting)
  • 2/3 cup Unsweetened cocoa powder (for frosting)
  • 3 cups Powdered sugar (for frosting)
  • 1/3 cup Milk (for frosting)
  • 1 teaspoon Vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter until smooth, then add the eggs, vanilla extract, and buttermilk, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the cake batter into the prepared cake pan and smooth the top.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. In a medium bowl, mix the shredded coconut, sweetened condensed milk, and vanilla extract.
  9. Once the cake has cooled completely, slice it in half horizontally and spread the coconut filling over the bottom layer.
  10. In a mixing bowl, beat the softened butter until creamy, then gradually add the cocoa powder and powdered sugar, alternating with the milk, mixing until smooth.
  11. Stir in the vanilla extract and spread the chocolate frosting over the cake.
  12. Enjoy your Mounds Cake!

Notes

For a twist, consider serving warm with vanilla ice cream. Store leftovers wrapped tightly to maintain freshness.
