- 4 cups all-purpose flour
- 1 tablespoon sugar
- 8 ounces mozzarella cheese, cut into sticks
- 1 tablespoon salt
- 2 teaspoons active dry yeast
- 1 1/2 cups warm water
- 1/3 cup baking soda
- 1 large egg
- Coarse salt for sprinkling
Instructions
- In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
- In another bowl, blend the all-purpose flour and salt. Gradually add the yeast mixture and knead until smooth and elastic.
- Cover the dough with a damp cloth and let it rise in a warm spot for about 1 hour, or until doubled in size.
- Preheat the oven to 450°F (232°C) and line baking sheets with parchment paper.
- Punch down the dough and divide it into 12 equal pieces. Flatten each piece and place a mozzarella stick in the center, sealing the cheese inside.
- Roll each filled piece into a long rope and twist into a pretzel shape.
- Boil 10 cups of water with baking soda. Add each pretzel for about 30 seconds before draining.
- Beat the egg and brush it over each pretzel. Sprinkle with coarse salt.
- Bake for 12-15 minutes until golden brown.
- Allow to cool slightly before serving.
Notes
Ensure the water is warm but not hot to activate the yeast. Allow the dough to rise sufficiently for best texture.
