Description

A delightful lasagna layered with mushrooms, spinach, and rich cheeses, perfect for any meal.


Ingredients

  • Lasagna noodles
  • Olive oil
  • Mushrooms, sliced
  • Spinach
  • Ricotta cheese
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • Garlic, minced
  • Onion, chopped
  • Italian seasoning
  • Salt and Pepper
  • Marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté onion and garlic in olive oil over medium heat until fragrant, about 2-3 minutes.
  3. Add sliced mushrooms and cook until golden brown, then stir in spinach until wilted.
  4. In a bowl, combine ricotta, Italian seasoning, salt, and pepper.
  5. Spread a layer of marinara in a baking dish, layer noodles, ricotta mixture, mushroom-spinach mixture, mozzarella, and marinara. Repeat layers, finishing with mozzarella and Parmesan.
  6. Cover with foil and bake for 30 minutes, remove foil and bake for an additional 15 minutes until bubbling and golden.
  7. Let it cool for a few minutes before slicing and serving.

Notes

For extra flavor, roast mushrooms beforehand. You can substitute ricotta with cottage cheese or cream cheese mixed with sour cream.
