Ingredients

  • 7 tablespoons unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 0.5 teaspoons fine salt
  • 3.25 cups sifted powdered sugar
  • 11 ounces semi-sweet chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. In a spacious mixing bowl, combine the creamy peanut butter and softened unsalted butter. Mix until fluffy and creamy.
  2. Incorporate the vanilla extract and fine salt, stirring until combined.
  3. Slowly add the sifted powdered sugar, stirring until fully combined.
  4. Roll the mixture into one-inch balls and place on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes.
  5. Melt semi-sweet chocolate chips with coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
