- 3.25 cups sifted powdered sugar
- 11 ounces semi-sweet chocolate chips
- 2 teaspoons coconut oil
Instructions
- In a spacious mixing bowl, combine the creamy peanut butter and softened unsalted butter. Mix until fluffy and creamy.
- Incorporate the vanilla extract and fine salt, stirring until combined.
- Slowly add the sifted powdered sugar, stirring until fully combined.
- Roll the mixture into one-inch balls and place on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes.
- Melt semi-sweet chocolate chips with coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Remove chilled peanut butter balls from the fridge and dip each into the melted chocolate, leaving a small portion of the peanut butter exposed.
- Return the chocolate-coated buckeyes to the parchment-lined sheet and chill for another 20 minutes to set.
