Easy and fun no-bake cookies that kids love, filled with butterscotch, peanut butter, marshmallows, and crunchy noodles.

- 6 oz butterscotch chips
- 1/2 cup crunchy peanut butter
- 1 1/2 cups crispy chow mein noodles
- 1 cup mini marshmallows
- Edible sugar eyes (1-2 per cookie)
Instructions
- Line a baking sheet with wax paper and set the sugar eyes aside.
- In a large pot over low heat, melt the butterscotch chips and peanut butter until smooth.
- Add the mini marshmallows and stir until they begin to melt, leaving some gooey pockets intact.
- Stir in the crispy chow mein noodles until evenly coated.
- Drop spoonfuls onto the wax paper and press edible sugar eyes into each cookie before they cool.
- Let cool completely for 10-15 minutes before serving.
Notes
Store in an airtight container at room temperature for up to a week. These cookies can also be frozen for longer storage.
