Description

Easy and fun no-bake cookies that kids love, filled with butterscotch, peanut butter, marshmallows, and crunchy noodles.


Ingredients

Scale
  • 6 oz butterscotch chips
  • 1/2 cup crunchy peanut butter
  • 1 1/2 cups crispy chow mein noodles
  • 1 cup mini marshmallows
  • Edible sugar eyes (1-2 per cookie)

Instructions

  1. Line a baking sheet with wax paper and set the sugar eyes aside.
  2. In a large pot over low heat, melt the butterscotch chips and peanut butter until smooth.
  3. Add the mini marshmallows and stir until they begin to melt, leaving some gooey pockets intact.
  4. Stir in the crispy chow mein noodles until evenly coated.
  5. Drop spoonfuls onto the wax paper and press edible sugar eyes into each cookie before they cool.
  6. Let cool completely for 10-15 minutes before serving.

Notes

Store in an airtight container at room temperature for up to a week. These cookies can also be frozen for longer storage.
