Ingredients

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 can (15 ounces) crushed tomatoes
  • 1 cup chicken broth
  • 1 cup orzo pasta
  • Fresh basil leaves for garnish

Instructions

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently and form small meatballs.
  2. Heat olive oil in a large pan over medium heat, then add the meatballs and brown on all sides for 5-7 minutes.
  3. Remove the meatballs and pour in the crushed tomatoes and chicken broth, stirring to combine. Bring to a simmer.
  4. Stir in the orzo and return the meatballs to the pan. Cover and simmer for about 10-12 minutes until the orzo is tender.
  5. Remove from heat and garnish with fresh basil leaves before serving.

Notes

Allow meatballs to rest after forming for better texture. Monitor orzo closely to prevent overcooking.
