- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 can (15 ounces) crushed tomatoes
- 1 cup chicken broth
- 1 cup orzo pasta
- Fresh basil leaves for garnish
Instructions
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently and form small meatballs.
- Heat olive oil in a large pan over medium heat, then add the meatballs and brown on all sides for 5-7 minutes.
- Remove the meatballs and pour in the crushed tomatoes and chicken broth, stirring to combine. Bring to a simmer.
- Stir in the orzo and return the meatballs to the pan. Cover and simmer for about 10-12 minutes until the orzo is tender.
- Remove from heat and garnish with fresh basil leaves before serving.
Notes
Allow meatballs to rest after forming for better texture. Monitor orzo closely to prevent overcooking.
