- 1 pound ground beef
- 1 cup long-grain rice
- 2 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup frozen peas and carrots
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.
- Add the ground beef, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until browned. Drain excess fat.
- Stir in the diced bell pepper, paprika, salt, and pepper. Cook for an additional 2-3 minutes until the bell pepper softens.
- Add the long-grain rice to the pot and stir to combine.
- Pour in the beef broth and soy sauce. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes.
- In the last 5 minutes, add the frozen peas and carrots. Stir gently to incorporate.
- Remove the pot from heat. Fluff the rice with a fork and garnish with fresh parsley before serving.
Notes
To add more flavor, consider including a bay leaf while simmering. You can also use different proteins like ground turkey or chicken.
