Description

A delightful one-pot meal featuring tender ground beef, fluffy rice, and colorful vegetables, perfect for a stress-free family dinner.


Ingredients

  • 1 pound ground beef
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup frozen peas and carrots
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.
  2. Add the ground beef, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until browned. Drain excess fat.
  3. Stir in the diced bell pepper, paprika, salt, and pepper. Cook for an additional 2-3 minutes until the bell pepper softens.
  4. Add the long-grain rice to the pot and stir to combine.
  5. Pour in the beef broth and soy sauce. Bring to a boil over medium-high heat.
  6. Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes.
  7. In the last 5 minutes, add the frozen peas and carrots. Stir gently to incorporate.
  8. Remove the pot from heat. Fluff the rice with a fork and garnish with fresh parsley before serving.

Notes

To add more flavor, consider including a bay leaf while simmering. You can also use different proteins like ground turkey or chicken.
