Ingredients

  • 1 cup orzo pasta
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Introduce the shrimp and cook until they turn pink, approximately 2-3 minutes.
  4. Stir in the orzo and chicken broth, and bring to a boil.
  5. Reduce heat and simmer until orzo is cooked and liquid is absorbed, about 10-12 minutes.
  6. Stir in lemon juice, and season with salt and pepper.
  7. Garnish with fresh parsley before serving.

Notes

For a creamier texture, stir in a splash of heavy cream after cooking the shrimp. You can replace orzo with zucchini noodles for a low-carb option.
