- 1/4 teaspoon ground black pepper
- 8 ounces whole wheat penne
- 2 cups chicken broth or vegetable stock
- 1 cup marinara sauce
- 3 tablespoons heavy cream
- 5 ounces fresh baby spinach
- 1/2 cup chopped fresh basil plus more for garnish
- 1/2 cup low moisture shredded mozzarella cheese
- Optional: grated Parmesan cheese for topping
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add the ground turkey and sauté for 5 to 7 minutes until golden brown.
- Incorporate chopped onions, halved tomatoes, oregano, thyme, garlic powder, sea salt, and black pepper. Cook for another 5 minutes until onions are translucent.
- Add whole wheat penne, chicken broth, marinara sauce, and heavy cream. Stir to combine.
- Bring the mixture to a gentle simmer, then cover and cook for 10 to 12 minutes until pasta is al dente.
- Gently stir in baby spinach, fresh basil, and mozzarella until well combined.
- Serve immediately and top with optional grated Parmesan if desired.
Notes
For lighter options, use low-sugar marinara or substitute heavy cream with coconut milk. Leftovers can be stored in the fridge for up to 3 days.
