  • 1 pound lean ground turkey
  • 1 cup chopped red onion
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 8 ounces whole wheat penne
  • 2 cups chicken broth or vegetable stock
  • 1 cup marinara sauce
  • 3 tablespoons heavy cream
  • 5 ounces fresh baby spinach
  • 1/2 cup chopped fresh basil plus more for garnish
  • 1/2 cup low moisture shredded mozzarella cheese
  • Optional: grated Parmesan cheese for topping

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add the ground turkey and sauté for 5 to 7 minutes until golden brown.
  3. Incorporate chopped onions, halved tomatoes, oregano, thyme, garlic powder, sea salt, and black pepper. Cook for another 5 minutes until onions are translucent.
  4. Add whole wheat penne, chicken broth, marinara sauce, and heavy cream. Stir to combine.
  5. Bring the mixture to a gentle simmer, then cover and cook for 10 to 12 minutes until pasta is al dente.
  6. Gently stir in baby spinach, fresh basil, and mozzarella until well combined.
  7. Serve immediately and top with optional grated Parmesan if desired.

Notes

For lighter options, use low-sugar marinara or substitute heavy cream with coconut milk. Leftovers can be stored in the fridge for up to 3 days.
