Ingredients

  • 1 ½–2 cups cherry tomatoes, halved
  • 2–3 peaches, sliced into wedges
  • 1 cup pitted fresh cherries
  • 8 oz burrata cheese
  • ¼ cup toasted pumpkin seeds
  • ½ cup extra virgin olive oil
  • ¼ cup balsamic or champagne vinegar
  • 1 tbsp honey
  • ½ shallot, finely chopped
  • 1 clove garlic, grated
  • 1 tsp lemon zest
  • ¼ cup chopped fresh basil
  • 2 tbsp chopped oregano
  • 1 tbsp chopped dill
  • 1 tbsp chopped thyme
  • Red pepper flakes
  • Kosher salt
  • Black pepper

Instructions

  1. Create the Vinaigrette: In a glass jar, whisk all vinaigrette ingredients until smooth, seasoning with kosher salt and black pepper to taste.
  2. Prepare the Salad Base: In a large bowl, gently toss cherry tomatoes, peaches, and cherries with one-third of the vinaigrette. Let sit for 15 minutes or chill for up to four hours.
  3. Combine It All: Transfer the mixture to a serving dish once flavors have melded.
  4. Add the Burrata: Tear burrata cheese over the salad.
  5. Finish It Up: Drizzle with remaining vinaigrette, topping with pumpkin seeds and fresh herbs.
  6. Serve It Right: Enjoy alongside grilled meats or toasted bread.
