- 1 ½–2 cups cherry tomatoes, halved
- 2–3 peaches, sliced into wedges
- 1 cup pitted fresh cherries
- 8 oz burrata cheese
- ¼ cup toasted pumpkin seeds
- ½ cup extra virgin olive oil
- ¼ cup balsamic or champagne vinegar
- 1 tbsp honey
- ½ shallot, finely chopped
- 1 clove garlic, grated
- 1 tsp lemon zest
- ¼ cup chopped fresh basil
- 2 tbsp chopped oregano
- 1 tbsp chopped dill
- 1 tbsp chopped thyme
- Red pepper flakes
- Kosher salt
- Black pepper
Instructions
- Create the Vinaigrette: In a glass jar, whisk all vinaigrette ingredients until smooth, seasoning with kosher salt and black pepper to taste.
- Prepare the Salad Base: In a large bowl, gently toss cherry tomatoes, peaches, and cherries with one-third of the vinaigrette. Let sit for 15 minutes or chill for up to four hours.
- Combine It All: Transfer the mixture to a serving dish once flavors have melded.
- Add the Burrata: Tear burrata cheese over the salad.
- Finish It Up: Drizzle with remaining vinaigrette, topping with pumpkin seeds and fresh herbs.
- Serve It Right: Enjoy alongside grilled meats or toasted bread.
