Description

Ingredients

  • 3 ripe peaches, sliced
  • 1/2 cup unsalted butter, divided
  • 1 cup granulated sugar, divided
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a round baking pan with butter.
  2. Arrange the sliced peaches, cut side down, in the pan.
  3. Melt 1/4 cup of butter with 1/2 cup of sugar in a saucepan over medium heat; pour over peaches.
  4. Cream remaining butter and sugar together until fluffy.
  5. Add eggs one at a time, mixing well after each addition; stir in vanilla extract.
  6. Whisk together flour and baking powder in another bowl.
  7. Alternate adding dry ingredients and milk to the wet mixture, stirring until just combined.
  8. Pour batter over peach layer and bake for 35-40 minutes or until a toothpick comes out clean.

Notes

Avoid overbaking to ensure a moist cake. Store leftovers wrapped in plastic wrap in an airtight container.
