- 12 mini peanut butter cups
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix granulated sugar, brown sugar, eggs, milk, vegetable oil, and vanilla extract until smooth.
- Gradually add dry ingredients to wet ingredients, then incorporate boiling water until fully combined.
- Fill the cupcake liners about two-thirds full and bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Use a small knife to core the center of each cupcake.
- In a separate bowl, beat together softened butter and creamy peanut butter until smooth; gradually add powdered sugar and cream until fluffy.
- Frost the filled cupcakes with the peanut butter frosting.
- Melt chocolate chips and drizzle over frosted cupcakes; top each with a mini peanut butter cup.
Notes
For a richer chocolate flavor, use high-quality cocoa powder. Consider letting the cupcakes cool overnight for enhanced flavor.
