Ingredients

  • 3/4 cup creamy peanut butter
  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1/2 cup chocolate chips or melting chocolate
  • 12 mini peanut butter cups

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet ingredients, then incorporate boiling water until fully combined.
  5. Fill the cupcake liners about two-thirds full and bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. Use a small knife to core the center of each cupcake.
  8. In a separate bowl, beat together softened butter and creamy peanut butter until smooth; gradually add powdered sugar and cream until fluffy.
  9. Frost the filled cupcakes with the peanut butter frosting.
  10. Melt chocolate chips and drizzle over frosted cupcakes; top each with a mini peanut butter cup.

Notes

For a richer chocolate flavor, use high-quality cocoa powder. Consider letting the cupcakes cool overnight for enhanced flavor.
