Ingredients

  • 1 pound beef sirloin, sliced into strips
  • 2 bell peppers (red and green), sliced
  • 1 onion, sliced
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a slow cooker, combine the sliced beef, bell peppers, onion, beef broth, soy sauce, minced garlic, and grated ginger.
  2. Stir to ensure well combined.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
  4. In the last 30 minutes of cooking, mix the cornstarch with a little water to create a slurry, then stir it into the slow cooker.
  5. Taste and season with salt and pepper as needed.
  6. Spoon the pepper steak over cooked rice and serve.

Notes

For added flavor, sear the beef before adding it to the slow cooker. Optional add-ins include mushrooms or snap peas.
