- 1 pound beef sirloin, sliced into strips
- 2 bell peppers (red and green), sliced
- 1 onion, sliced
- 1 cup beef broth
- 1/2 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a slow cooker, combine the sliced beef, bell peppers, onion, beef broth, soy sauce, minced garlic, and grated ginger.
- Stir to ensure well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
- In the last 30 minutes of cooking, mix the cornstarch with a little water to create a slurry, then stir it into the slow cooker.
- Taste and season with salt and pepper as needed.
- Spoon the pepper steak over cooked rice and serve.
Notes
For added flavor, sear the beef before adding it to the slow cooker. Optional add-ins include mushrooms or snap peas.
