  • 1 cup uncooked long-grain white rice

  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 cup canned diced tomatoes, drained
  • 1.5 cups shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat.
  2. Add ground beef to the hot skillet and brown, breaking it apart. Drain excess grease.
  3. Push beef to one side, add onion and bell pepper, and sauté for 5 minutes. Stir in garlic and cook for 1 more minute.
  4. Season with smoked paprika, cumin, chili flakes, salt, and pepper.
  5. Incorporate rice and pour in beef broth. Bring to a gentle boil, then reduce heat, cover, and let simmer for 18-20 minutes.
  6. Once rice has absorbed liquid, sprinkle cheese on top, cover, and let melt for 2-3 minutes.
  7. Turn off heat, sprinkle with parsley, and serve warm from the skillet.
