- 2 cloves garlic, minced

- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili flakes
- Salt and pepper to taste
- 2 cups beef broth
- 1 cup canned diced tomatoes, drained
- 1.5 cups shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large skillet over medium heat.
- Add ground beef to the hot skillet and brown, breaking it apart. Drain excess grease.
- Push beef to one side, add onion and bell pepper, and sauté for 5 minutes. Stir in garlic and cook for 1 more minute.
- Season with smoked paprika, cumin, chili flakes, salt, and pepper.
- Incorporate rice and pour in beef broth. Bring to a gentle boil, then reduce heat, cover, and let simmer for 18-20 minutes.
- Once rice has absorbed liquid, sprinkle cheese on top, cover, and let melt for 2-3 minutes.
- Turn off heat, sprinkle with parsley, and serve warm from the skillet.
