- 1 Fresh Pineapple, diced
- 1 Red Pepper, diced
- 1 Red Onion, diced
- 2 Garlic cloves, minced
- 1 Jalapeño Pepper, diced
- Juice of 1 Fresh Lime
- 1/2 teaspoon Sea Salt
- 1/4 cup Cilantro (optional), chopped
- Whey (optional)
Instructions
- Prepare the pineapple by cutting off the top and bottom, slicing away the skin, and dicing the flesh.
- Dice the red pepper, onion, and garlic, and jalapeño pepper (removing seeds for milder salsa).
- In a large bowl, combine all diced ingredients and squeeze lime juice over the mixture, adding sea salt.
- If using, fold in chopped cilantro and let sit for at least 10 minutes before serving.
Notes
Best enjoyed fresh, but can be stored in an airtight container in the fridge for 2-3 days.
