Description

A delightful twist on the classic dessert, these cookies burst with tropical sweetness from pineapple and a caramel-like flavor from brown sugar.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple, drained
  • Maraschino cherries for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Cream together the brown sugar, granulated sugar, and softened butter until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Fold in the drained crushed pineapple gently.
  6. Drop balls of cookie dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Top each cookie with a maraschino cherry.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool before transferring to a wire rack.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. You can also use fresh pineapple and experiment with toppings.
