Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8×8 inch baking pan with grease and parchment paper.
- Cream the softened butter and sugar together until light and fluffy.
- Add eggs one at a time, beating well, and stir in vanilla extract.
- Sift together the flour, cocoa powder, baking powder, and salt, then gradually mix into the creamed mixture.
- Spread the batter evenly in the baking pan.
- Bake for 20 to 25 minutes, testing doneness with a toothpick.
- Allow the cake to cool completely in the pan.
- In a bowl, whisk powdered sugar, milk, and pink food coloring for frosting.
- Spread the pink frosting over the cooled cake.
- Sprinkle additional coconut over the frosting.
- Slice into bars and serve.
