A timeless and heartwarming potato salad that features tender potatoes in a creamy, tangy dressing, perfect for picnics and gatherings.

- 5 lbs russet potatoes, cleaned and peeled
- 2 cups Miracle Whip
- 1/3 cup sweet relish
- 1 tbsp yellow mustard
- 1 tsp salt
- 1/2 tsp black pepper
- 6 hard-boiled eggs, peeled and chopped
- 1/2 cup celery, diced
- 1/3 cup green onions, diced
- 1/3 cup yellow onion, diced
Instructions
- Add the cleaned and peeled potatoes to a large pot and cover with an inch of water.
- Bring to a boil, then reduce heat and cover, simmering until tender, approximately 25-30 minutes.
- Drain the potatoes and let cool.
- Chop the potatoes into bite-sized cubes.
- In a large mixing bowl, combine Miracle Whip, sweet relish, mustard, salt, and black pepper until smooth.
- Fold in the diced celery, green onions, yellow onions, and chopped eggs.
- Cover the bowl with plastic wrap and chill in the fridge for at least four hours.
Notes
This dish is best made a day in advance to allow the flavors to meld together.
