Description

A moist and flavorful pumpkin banana bread perfect for breakfast, snacks, or dessert, combining sweet banana and spiced pumpkin goodness.


Ingredients

  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 medium bananas (mashed)
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. Grease and flour a 9×5 inch loaf pan.
  3. In a medium bowl, whisk together the flour, spices, baking soda, baking powder, and salt.
  4. In a large bowl, whisk together the oil, sugars, eggs, and vanilla until smooth.
  5. Add the mashed bananas and pumpkin puree to the wet ingredients and mix until combined.
  6. Carefully stir the dry ingredients into the wet mixture until just combined.
  7. If desired, fold in chopped walnuts.
  8. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
