- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 medium bananas (mashed)
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F.
- Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, spices, baking soda, baking powder, and salt.
- In a large bowl, whisk together the oil, sugars, eggs, and vanilla until smooth.
- Add the mashed bananas and pumpkin puree to the wet ingredients and mix until combined.
- Carefully stir the dry ingredients into the wet mixture until just combined.
- If desired, fold in chopped walnuts.
- Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, do not overmix the batter and keep an eye on baking time to prevent dryness.
