Description

Delicious Pumpkin Cheesecake Bars combining creamy cheesecake with pumpkin and warm spices, perfect for fall gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 16 oz cream cheese, softened
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, stir together graham cracker crumbs, melted butter, and granulated sugar until crumbly.
  3. Press the crust mixture firmly into the bottom of the prepared pan.
  4. In a large bowl, beat softened cream cheese until smooth and add in the sugar until combined.
  5. Mix in pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, and ginger until well blended.
  6. Pour the filling over the crust and place in the oven.
  7. Bake for 30-35 minutes until the center is set but slightly jiggly.
  8. Allow to cool at room temperature, then chill in the refrigerator for at least 2 hours.
  9. Slice into squares and serve chilled.

Notes

These bars freeze well; wrap them tightly and store for up to 3 months. Ideal with whipped cream or vanilla ice cream.
