- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1 cup pumpkin puree
- 16 oz cream cheese, softened
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a bowl, stir together graham cracker crumbs, melted butter, and granulated sugar until crumbly.
- Press the crust mixture firmly into the bottom of the prepared pan.
- In a large bowl, beat softened cream cheese until smooth and add in the sugar until combined.
- Mix in pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, and ginger until well blended.
- Pour the filling over the crust and place in the oven.
- Bake for 30-35 minutes until the center is set but slightly jiggly.
- Allow to cool at room temperature, then chill in the refrigerator for at least 2 hours.
- Slice into squares and serve chilled.
Notes
These bars freeze well; wrap them tightly and store for up to 3 months. Ideal with whipped cream or vanilla ice cream.
