Ingredients

  • ½ cup milk (dairy or non-dairy)

  • 1 tbsp chia seeds
  • ½ tsp vanilla extract
  • ½ tsp pumpkin pie spice
  • ½ tbsp maple syrup or honey
  • ¼ cup Greek yogurt or cream cheese
  • 1 tbsp milk (for the cheesecake layer)

  • Optional toppings: crushed graham crackers, cinnamon, or a maple drizzle

Instructions

  1. In a glass jar, combine the rolled oats, milk, pumpkin purée, chia seeds, vanilla extract, pumpkin pie spice, and maple syrup. Stir until everything is well incorporated.
  2. In a separate bowl, blend the creamy yogurt or cream cheese with a splash of milk and maple syrup or honey.
  3. Pour half of the oat mixture into a clean jar, then add a layer of the cheesecake-like mix. Top with the rest of the oats.
  4. Seal your jar with a lid and refrigerate overnight.
  5. In the morning, stir everything together and add an extra splash of milk if desired.
  6. Sprinkle with crushed graham crackers or cinnamon, drizzle with maple syrup, and enjoy!
