Description

Ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 16 ounces gnocchi
  • 13.5-ounce can full-fat coconut milk
  • 1/3 cup vegetable broth
  • 1 cup pumpkin puree
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt (more or less to taste)
  • A few shakes of ground black pepper
  • 2 cups loosely packed chopped kale or spinach

Instructions

  1. Heat olive oil over medium heat in a large pan.
  2. Add garlic and cook until fragrant.
  3. Add gnocchi, coconut milk, broth, pumpkin puree, sage, thyme, salt, and pepper; stir to combine.
  4. Stir and bring to a boil.
  5. Lower heat and simmer uncovered for 5 minutes, stirring occasionally.
  6. Stir in kale or spinach and cook until wilted.
  7. Serve immediately.

Notes

For a healthier option, consider unsweetened coconut milk and substituting pumpkin with butternut squash.
