- 3/4 cup unsalted butter, melted and slightly cooled
- 1/2 cup pure pumpkin puree
- 1 cup brown sugar
- 1/4 cup maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the melted butter, brown sugar, pumpkin puree, maple syrup, egg, and vanilla.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Ensure butter is melted but not hot to avoid cooking the egg. Let cookie dough rest for about 20 minutes before baking for the best texture.
