Description

Ingredients

  • 1 cup pumpkin puree
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  2. In another bowl, blend the pumpkin puree, milk, egg, melted butter, and vanilla extract.
  3. Gradually pour the wet mixture into the dry mixture, stir until just combined.
  4. Preheat a skillet or griddle over medium heat and lightly grease it.
  5. Pour approximately 1/4 cup of batter onto the skillet, cooking until bubbles form, about 2-3 minutes.
  6. Flip the pancake and cook for another 2-3 minutes until golden brown.
  7. Serve warm with syrup or desired toppings.

For consistent size, use an ice cream scoop or measuring cup for the batter. Keep pancakes warm in the oven if making multiple batches.
