Ingredients

  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 pound boneless chicken breast or thighs
  • 6 cups chicken broth
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup milk
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion, sliced carrots, and sliced celery; sauté until softened.
  3. Stir in the minced garlic and sear the chicken pieces until slightly browned.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. In a bowl, mix the flour with baking powder, salt, and pepper, then stir in the milk to form a soft dough.
  6. Drop spoonfuls of dough into the simmering broth.
  7. Cover the pot and steam the dumplings until fluffy, about 15 minutes.
  8. Remove the chicken, shred it, and return it to the pot.
  9. Taste and adjust seasoning, then add freshly chopped parsley before serving.

Notes

For a creamier broth, stir in a splash of heavy cream before serving. You can also add frozen peas or corn for extra flavor.
