Description

Delightful cookies with a tart raspberry filling, perfect for family gatherings and festive occasions.


Ingredients

Scale
  • 200g All-Purpose Flour
  • 100g Butter
  • 80g Sugar
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • 100g Raspberry Jam
  • Powdered Sugar for Dusting

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cream the butter and sugar together until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. Gradually add the flour until a dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thick.
  6. Cut out shapes with cookie cutters.
  7. Place half of the cookies on a baking sheet lined with parchment paper.
  8. Spoon a small amount of raspberry jam onto each cookie.
  9. Place the remaining cut-out cookies on top and gently press down to seal them.
  10. Bake for 10-12 minutes or until lightly golden.
  11. Let cool and dust with powdered sugar before serving.

Notes

For a richer flavor, consider browning the butter. Add lemon zest for enhanced raspberry flavor.
