Description

A refreshing, vibrant raspberry sorbet that is quick to make and delivers a burst of berry goodness.


Ingredients

Scale
  • 2 cups fresh raspberries
  • 3/4 cup granulated sugar
  • 1/2 cup water
  • 2 tbsp fresh lemon juice

Instructions

  1. Rinse the raspberries under cold water and gently pat them dry, being careful not to squish them.
  2. In a saucepan, combine the water and sugar over medium heat, stirring until the sugar has completely dissolved into a lovely syrup.
  3. Once the syrup is cool, blend the raspberries with it, alongside the fresh lemon juice, until the mixture is smooth.
  4. If you prefer a silky-smooth sorbet, strain the mixture through a fine mesh sieve to remove any seeds.
  5. Transfer the puree into an airtight container and freeze for at least 240 minutes, or until firm enough to scoop.
  6. Scoop into bowls and garnish with fresh mint for an extra flourish.

Notes

Make sure to clean up raspberry spills immediately to avoid staining.
