Description
A refreshing, vibrant raspberry sorbet that is quick to make and delivers a burst of berry goodness.
Ingredients
Scale
- 2 cups fresh raspberries
- 3/4 cup granulated sugar
- 1/2 cup water
- 2 tbsp fresh lemon juice
Instructions
- Rinse the raspberries under cold water and gently pat them dry, being careful not to squish them.
- In a saucepan, combine the water and sugar over medium heat, stirring until the sugar has completely dissolved into a lovely syrup.
- Once the syrup is cool, blend the raspberries with it, alongside the fresh lemon juice, until the mixture is smooth.
- If you prefer a silky-smooth sorbet, strain the mixture through a fine mesh sieve to remove any seeds.
- Transfer the puree into an airtight container and freeze for at least 240 minutes, or until firm enough to scoop.
- Scoop into bowls and garnish with fresh mint for an extra flourish.
Notes
Make sure to clean up raspberry spills immediately to avoid staining.
