- 1 large head cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup marinara or pizza sauce (sugar-free preferred)
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup mini turkey or beef pepperoni slices
- 1/4 cup sliced black olives
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red onion
- 1 tsp dried oregano
- 1 tsp crushed red pepper flakes (optional)
- 2 tbsp chopped fresh basil or parsley (for garnish)
- Extra grated Parmesan (optional)
Instructions
- Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, garlic powder, Italian seasoning, salt, and black pepper. Spread evenly on a baking sheet and roast for 25–30 minutes, flipping halfway through.
- Transfer roasted cauliflower to a greased 9×13 inch casserole dish. Pour marinara sauce evenly, toss to coat, then layer with mozzarella, bell pepper, red onion, olives, and half of the pepperoni. Top with remaining mozzarella, Parmesan, remaining pepperoni, oregano, and red pepper flakes.
- Bake at 375°F (190°C) for 20–25 minutes until cheese is melted and bubbling. Broil for 2–3 minutes for a golden top, watching carefully to avoid burning.
- Let cool for about 5 minutes, garnish with basil or parsley, and serve hot.
Notes
For a healthier option, use homemade sauce and consider dairy-free cheese alternatives. Leftovers can be frozen for up to three months.
