Ingredients

  • 2.5 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp minced garlic
  • 0.75 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 1 tsp fresh thyme leaves
  • 0.25 tsp red pepper flakes (adjust to taste)
  • 2 tbsp fresh basil, chopped (for finishing)
  • 2 tbsp finely grated Parmesan (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) and gather your ingredients.
  2. Rinse the cherry tomatoes under cool water and gently pat them dry.
  3. In a large mixing bowl, combine olive oil, balsamic vinegar, minced garlic, salt, pepper, thyme, and red pepper flakes.
  4. Add the rinsed cherry tomatoes to the bowl and toss them gently in the marinade.
  5. Transfer the marinated tomatoes to a baking sheet lined with parchment paper, spreading them evenly.
  6. Roast in the preheated oven for 20-25 minutes, until blistered and caramelized.
  7. Remove from the oven and let cool for a few minutes, then sprinkle with fresh basil and Parmesan if desired.
