- 2.5 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar
- 2 tsp minced garlic
- 0.75 tsp kosher salt
- 0.5 tsp freshly ground black pepper
- 1 tsp fresh thyme leaves
- 0.25 tsp red pepper flakes (adjust to taste)
- 2 tbsp fresh basil, chopped (for finishing)
- 2 tbsp finely grated Parmesan (optional, for serving)
Instructions
- Preheat your oven to 400°F (200°C) and gather your ingredients.
- Rinse the cherry tomatoes under cool water and gently pat them dry.
- In a large mixing bowl, combine olive oil, balsamic vinegar, minced garlic, salt, pepper, thyme, and red pepper flakes.
- Add the rinsed cherry tomatoes to the bowl and toss them gently in the marinade.
- Transfer the marinated tomatoes to a baking sheet lined with parchment paper, spreading them evenly.
- Roast in the preheated oven for 20-25 minutes, until blistered and caramelized.
- Remove from the oven and let cool for a few minutes, then sprinkle with fresh basil and Parmesan if desired.
Notes
For best results, use high-quality cherry tomatoes. You can opt for quick roasting for firmer texture or slow-roasting for a sweeter, tender outcome.
