Ingredients

  • 2 lbs Idaho potatoes, cubed
  • 1 whole head garlic
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh herbs (rosemary or thyme), chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the top off the garlic head, drizzle it with olive oil, wrap it in foil, and set aside.
  3. Roast the garlic in the oven for about 30-35 minutes until soft and fragrant.
  4. Toss the cubed Idaho potatoes with olive oil, salt, pepper, and fresh herbs until evenly coated.
  5. Spread the potatoes on the prepared baking sheet alongside the wrapped garlic.
  6. Roast for about 25-30 minutes until the potatoes are golden brown and crispy, flipping them halfway through.
  7. Once cooked, squeeze the roasted garlic cloves into a bowl and mash them together with the potatoes until well combined.
  8. Serve hot, garnished with additional fresh herbs if desired.
