- 2 lbs Idaho potatoes, cubed
- 1 whole head garlic
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh herbs (rosemary or thyme), chopped
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the top off the garlic head, drizzle it with olive oil, wrap it in foil, and set aside.
- Roast the garlic in the oven for about 30-35 minutes until soft and fragrant.
- Toss the cubed Idaho potatoes with olive oil, salt, pepper, and fresh herbs until evenly coated.
- Spread the potatoes on the prepared baking sheet alongside the wrapped garlic.
- Roast for about 25-30 minutes until the potatoes are golden brown and crispy, flipping them halfway through.
- Once cooked, squeeze the roasted garlic cloves into a bowl and mash them together with the potatoes until well combined.
- Serve hot, garnished with additional fresh herbs if desired.
