Description

A delightful dish featuring savory sausage, nutritious broccoli, and tender orzo pasta in a creamy sauce.


Ingredients

  • 8 ounces (225g) orzo pasta
  • 1 tablespoon olive oil
  • 1 pound (450g) Italian sausage (casings removed)
  • 4 cups (about 1lb or 450g) broccoli florets
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add orzo pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add Italian sausage, breaking it apart, and cook until browned (about 5-7 minutes). Remove sausage and set aside, leaving drippings.
  3. Add broccoli to the skillet and sauté for 3-4 minutes until bright green and tender-crisp.
  4. Stir in minced garlic and optional red pepper flakes; cook for an additional minute.
  5. Return cooked sausage to skillet. Pour in chicken broth and heavy cream; stir and bring to a gentle simmer.
  6. Mix in cooked orzo and heat through for 2-3 minutes.
  7. Stir in grated Parmesan cheese and season with salt and black pepper to taste.
  8. Garnish with freshly chopped parsley before serving.

Notes

Consider adding more veggies such as bell peppers or spinach for added nutrition. For extra flavor, deglaze the pan with lemon juice or chicken stock.
