- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 large ripe mango, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 1/4 cup red onion, finely diced
- 1 jalapeño pepper, finely chopped (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Wash your fresh ingredients. Chop the mango into small cubes, and dice the avocados carefully.
- Finely chop the cilantro and jalapeño (if using).
- In a large skillet, heat olive oil over medium heat. Season the shrimp with salt and pepper, then add them to the pan. Cook for about 3-4 minutes per side until they are opaque.
- While the shrimp cooks, mix the diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl.
- Layer slices of avocado in each serving bowl. Top with shrimp and mango salsa.
- Serve immediately, optionally with extra lime wedges on the side.
Notes
Ensure shrimp are fresh. Dice avocados just before serving to prevent browning. For intense flavor, marinate shrimp in lime juice and olive oil for 30 minutes before cooking.
