Description

A vibrant and satisfying shrimp rice bowl topped with a spicy, creamy mayo, perfect for quick weeknight dinners or family gatherings.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked jasmine rice
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha
  • 1 tsp soy sauce
  • 1/2 tsp sesame oil
  • 1 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup shredded carrots
  • 2 green onions, chopped
  • 1 tbsp sesame seeds
  • 1 sheet nori, cut into thin strips
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tbsp of olive oil in a pan over medium heat.
  2. Season shrimp with salt and pepper.
  3. Sauté shrimp for 3-4 minutes until cooked through.
  4. In a small bowl, mix mayonnaise, sriracha, soy sauce, and sesame oil to create the spicy mayo.
  5. Divide cooked jasmine rice into bowls.
  6. Top each bowl with shrimp, avocado, cucumber, carrots, and green onions.
  7. Drizzle spicy mayo over each bowl.
  8. Finish with sesame seeds and nori strips.
  9. Serve immediately.
