- 1 lb shrimp, peeled and deveined
- 2 cups cooked jasmine rice
- 1/4 cup mayonnaise
- 1 tbsp sriracha
- 1 tsp soy sauce
- 1/2 tsp sesame oil
- 1 avocado, sliced
- 1/2 cucumber, thinly sliced
- 1/4 cup shredded carrots
- 2 green onions, chopped
- 1 tbsp sesame seeds
- 1 sheet nori, cut into thin strips
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat 1 tbsp of olive oil in a pan over medium heat.
- Season shrimp with salt and pepper.
- Sauté shrimp for 3-4 minutes until cooked through.
- In a small bowl, mix mayonnaise, sriracha, soy sauce, and sesame oil to create the spicy mayo.
- Divide cooked jasmine rice into bowls.
- Top each bowl with shrimp, avocado, cucumber, carrots, and green onions.
- Drizzle spicy mayo over each bowl.
- Finish with sesame seeds and nori strips.
- Serve immediately.
