- 2 cloves fresh garlic, minced
- 4 cups romaine lettuce, chopped
- 1 ripe avocado, diced
- ½ cup freshly grated Parmesan cheese
- ½ cup low-calorie Caesar dressing
- 1 cup whole grain croutons
Instructions
- Season the chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and sear chicken for 6-7 minutes per side until cooked through.
- Wash and chop the romaine lettuce and place it in a large mixing bowl.
- In a smaller bowl, combine the low-calorie Caesar dressing and minced garlic; whisk until well blended.
- Slice the cooked chicken into strips and toss into the bowl with the romaine lettuce.
- Add diced avocado and freshly grated Parmesan cheese, mixing gently.
- Drizzle additional Caesar dressing if desired, toss gently, and finish with whole grain croutons.
Notes
