Description

A comforting and nostalgic Sloppy Joe casserole topped with gooey cheese on toasted Hawaiian rolls, perfect for busy weeknights or family gatherings.


Ingredients

  • 1 Tbsp. vegetable oil
  • 1 lb. ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, finely chopped
  • 2/3 cup ketchup
  • 1 Tbsp. chili powder
  • 1 tsp. dried mustard
  • 1 (8-oz.) can tomato sauce
  • 1 cup low-sodium beef or chicken broth
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. Worcestershire sauce
  • 2 tsp. dark brown sugar
  • Hot sauce (optional)
  • 8 sweet Hawaiian slider rolls, halved crosswise
  • 1 Tbsp. unsalted butter, melted
  • 1 cup shredded cheddar
  • Chopped fresh parsley, for serving (optional)

Instructions

  1. Preheat oven to 375°F.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned (6-8 minutes). Transfer to a plate.
  3. In the same skillet, sauté onions, bell peppers, and garlic in about 1 tablespoon of beef fat until softened (10-12 minutes). Season with salt and pepper.
  4. Stir in ketchup and cook until it thickens (5-6 minutes).
  5. Add chili powder and mustard, cooking for 30 seconds before adding tomato sauce, broth, apple cider vinegar, Worcestershire sauce, and brown sugar. Mix well.
  6. Return the cooked beef to the skillet, adding hot sauce if desired, and combine.
  7. Transfer the mixture to a 2-quart baking dish, spreading evenly.
  8. Top with halved Hawaiian rolls, cut side down.
  9. Brush rolls with melted butter and sprinkle with shredded cheese.
  10. Bake for 10-15 minutes until rolls are golden brown and cheese is melted.
  11. Sprinkle with parsley before serving.

Notes

For a healthier option, substitute lean ground turkey or chicken and use whole-grain slider rolls.
