A comforting and nostalgic Sloppy Joe casserole topped with gooey cheese on toasted Hawaiian rolls, perfect for busy weeknights or family gatherings.

- 1 Tbsp. vegetable oil
- 1 lb. ground beef
- Kosher salt
- Freshly ground black pepper
- 1 medium yellow onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, finely chopped
- 2/3 cup ketchup
- 1 Tbsp. chili powder
- 1 tsp. dried mustard
- 1 (8-oz.) can tomato sauce
- 1 cup low-sodium beef or chicken broth
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. Worcestershire sauce
- 2 tsp. dark brown sugar
- Hot sauce (optional)
- 8 sweet Hawaiian slider rolls, halved crosswise
- 1 Tbsp. unsalted butter, melted
- 1 cup shredded cheddar
- Chopped fresh parsley, for serving (optional)
Instructions
- Preheat oven to 375°F.
- In a large skillet, heat the vegetable oil over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned (6-8 minutes). Transfer to a plate.
- In the same skillet, sauté onions, bell peppers, and garlic in about 1 tablespoon of beef fat until softened (10-12 minutes). Season with salt and pepper.
- Stir in ketchup and cook until it thickens (5-6 minutes).
- Add chili powder and mustard, cooking for 30 seconds before adding tomato sauce, broth, apple cider vinegar, Worcestershire sauce, and brown sugar. Mix well.
- Return the cooked beef to the skillet, adding hot sauce if desired, and combine.
- Transfer the mixture to a 2-quart baking dish, spreading evenly.
- Top with halved Hawaiian rolls, cut side down.
- Brush rolls with melted butter and sprinkle with shredded cheese.
- Bake for 10-15 minutes until rolls are golden brown and cheese is melted.
- Sprinkle with parsley before serving.
Notes
For a healthier option, substitute lean ground turkey or chicken and use whole-grain slider rolls.
