Ingredients

- 1 1/2 cups warm water (around 110°F)
- 1 packet active dry or instant yeast (2 1/4 teaspoons)
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour
- 2/3 cup baking soda
- 1 large egg (beaten with 1 tablespoon water)
- Coarse sea salt
- Butter for brushing (optional)
Instructions
- In a large mixing bowl, combine the warm water and yeast. Let it sit for 5 minutes until it becomes foamy.
- Stir in salt and sugar until dissolved.
- Gradually add the flour and mix until a dough begins to form.
- Knead for 4-5 minutes until smooth.
- Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat your oven to 450°F and line a baking sheet with parchment paper.
- In a large pot, bring 10 cups of water and baking soda to a boil.
- Punch the risen dough down and divide it into 6 pieces. Roll each piece into ropes and cut them into 1-inch bites.
- Carefully drop the pretzel bites into the boiling baking soda water in batches for 30 seconds.
- Remove the bites and place them on the baking sheet. Brush with egg wash and sprinkle with coarse sea salt.
- Bake for 12-15 minutes or until golden brown.
- Optionally brush with melted butter after baking.
Notes
For healthier options, use whole wheat flour and low-sugar variations. Be mindful of baking times to avoid overbaking.
