- 1/2 small red onion (thinly sliced)
- 1 avocado (sliced or diced)
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup fresh cilantro (chopped)
- Tortilla strips (for crunch, optional)
- Jalapeño slices (for heat, optional)
- Crumbled cotija cheese (optional)
Instructions
- If using grilled chicken, slice it into tender strips; if using shredded, opt for pre-cooked rotisserie chicken.
- In a small bowl, whisk together Greek yogurt, lime juice, olive oil, honey, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper until smooth and creamy. Set aside.
- In a large bowl, combine the romaine lettuce, cherry tomatoes, black beans, corn, bell pepper, red onion, and cilantro.
- Top the mixture with chicken and avocado. Drizzle the dressing over the top and gently toss to coat.
- For added crunch, sprinkle with cheddar cheese, tortilla strips, and jalapeños if desired. Serve immediately.
