Description

A delightful explosion of flavors wrapped in soft tortillas, perfect for busy weeknights or casual gatherings.


Ingredients

  • 2 chicken breasts, marinated
  • 4 whole wheat tortillas
  • 1 cup bell peppers, sliced
  • 1/2 cup red onion, sliced
  • 1 cup corn, cooked
  • 1 avocado, sliced
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup cilantro, chopped
  • 1/2 cup ranch or zesty sauce
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken breasts for at least 30 minutes, then grill or cook until fully cooked through and no longer pink. Allow it to cool and slice into bite-sized pieces.
  2. In a large mixing bowl, combine bell peppers, red onion, corn, black beans, and cilantro.
  3. Lay a tortilla flat and spread a layer of sauce over it.
  4. Layer marinated chicken, veggie mixture, and avocado on one side of the tortilla.
  5. Season with salt and pepper.
  6. Roll the tortilla tightly around the fillings and slice in half to serve.
  7. Plate beautifully and enjoy!
