- 2 chicken breasts, marinated
- 4 whole wheat tortillas
- 1 cup bell peppers, sliced
- 1/2 cup red onion, sliced
- 1 cup corn, cooked
- 1 avocado, sliced
- 1/2 cup black beans, rinsed and drained
- 1/4 cup cilantro, chopped
- 1/2 cup ranch or zesty sauce
- Salt and pepper to taste
Instructions
- Marinate the chicken breasts for at least 30 minutes, then grill or cook until fully cooked through and no longer pink. Allow it to cool and slice into bite-sized pieces.
- In a large mixing bowl, combine bell peppers, red onion, corn, black beans, and cilantro.
- Lay a tortilla flat and spread a layer of sauce over it.
- Layer marinated chicken, veggie mixture, and avocado on one side of the tortilla.
- Season with salt and pepper.
- Roll the tortilla tightly around the fillings and slice in half to serve.
- Plate beautifully and enjoy!
