- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 inches fresh ginger, peeled and grated
- 1 small chili pepper, finely chopped
- 4 cups vegetable or chicken broth
- 2 medium carrots, sliced
- 1 cup sweet corn (fresh or frozen)
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the finely chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic, grated ginger, and finely chopped chili pepper; cook for an additional 2 minutes.
- Pour in the vegetable or chicken broth and bring to a gentle boil.
- Add sliced carrots and sweet corn; reduce heat and simmer for 10-15 minutes until carrots are tender.
- Stir in coconut milk, soy sauce, and lime juice; simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro and lime wedges on the side.
