Description

A warm and comforting soup combining the heat of ginger with creamy coconut milk, perfect for any occasion.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 inches fresh ginger, peeled and grated
  • 1 small chili pepper, finely chopped
  • 4 cups vegetable or chicken broth
  • 2 medium carrots, sliced
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic, grated ginger, and finely chopped chili pepper; cook for an additional 2 minutes.
  4. Pour in the vegetable or chicken broth and bring to a gentle boil.
  5. Add sliced carrots and sweet corn; reduce heat and simmer for 10-15 minutes until carrots are tender.
  6. Stir in coconut milk, soy sauce, and lime juice; simmer for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro and lime wedges on the side.
