Description

A vibrant and refreshing salad featuring fresh spinach, sweet apples, and tart cranberries, perfect for quick lunches or gatherings.


Ingredients

  • 6 cups baby spinach, washed and dried
  • 1 large apple, cored and thinly sliced
  • 1/4 small red onion, thinly sliced
  • 3/4 cup dried cranberries
  • 1/4 cup pepitas (pumpkin seeds), toasted
  • 1/3 cup goat cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar or balsamic vinegar
  • 1 tablespoon maple syrup or honey
  • Salt and pepper to taste

Instructions

  1. Add the washed and dried spinach to a wide salad bowl.
  2. Top with sliced apples, red onion, cranberries, pepitas, and crumbled goat cheese.
  3. In a small jar, combine olive oil, vinegar, maple syrup, salt, and pepper; shake well.
  4. Drizzle half of the dressing over the salad and toss gently.
  5. Serve immediately with extra dressing on the side.

Notes

Store leftovers in an airtight container but keep in mind that spinach wilts quickly. Best eaten fresh.
