- 6 cups baby spinach, washed and dried
- 1 large apple, cored and thinly sliced
- 1/4 small red onion, thinly sliced
- 3/4 cup dried cranberries
- 1/4 cup pepitas (pumpkin seeds), toasted
- 1/3 cup goat cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar or balsamic vinegar
- 1 tablespoon maple syrup or honey
- Salt and pepper to taste
Instructions
- Add the washed and dried spinach to a wide salad bowl.
- Top with sliced apples, red onion, cranberries, pepitas, and crumbled goat cheese.
- In a small jar, combine olive oil, vinegar, maple syrup, salt, and pepper; shake well.
- Drizzle half of the dressing over the salad and toss gently.
- Serve immediately with extra dressing on the side.
Notes
Store leftovers in an airtight container but keep in mind that spinach wilts quickly. Best eaten fresh.
