- 1 pre-made pie crust (9-inch)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, washed and chopped
- 1 cup ricotta cheese
- 1 cup feta cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 teaspoon nutmeg
- Salt and pepper, to taste
- 1 tablespoon fresh dill or 1 teaspoon dried dill
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat, then add the chopped onion and sauté for about 5 minutes.
- Add the minced garlic and cook for another minute.
- Gradually add the chopped spinach and stir until wilted, about 3-4 minutes. Remove from heat and cool slightly.
- In a large bowl, combine ricotta, feta, Parmesan cheese, and eggs. Mix well.
- Stir in the cooled spinach and onion mixture, then season with nutmeg, salt, pepper, and dill.
- Roll out the pie crust and fit it into a 9-inch pie dish.
- Spoon the filling into the crust and spread evenly.
- Cover with the second pie crust, sealing edges by crimping.
- Cut slits in the top crust to let steam escape.
- Brush with beaten egg for a golden finish.
- Bake for 35-40 minutes until the crust is golden and filling is set.
- Let cool for 10 minutes before slicing and serving.
Notes
Serve warm with a side salad. You can prepare the filling a day in advance and refrigerate it.
