Description

A delightful blend of sweet strawberries and zesty lemons in a moist loaf, perfect for summer days.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 ounces fresh strawberries, hulled and chopped
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • Juice of half a lemon (about 2 tablespoons)
  • Zest of one lemon
  • 1/4 cup granulated sugar (for glaze)
  • Juice of half a lemon (about 2 tablespoons, for glaze)
  • 2 tablespoons warm water (for glaze)

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt. Gently toss in the chopped strawberries.
  4. In another bowl, whisk together the milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Spoon the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the bread bakes, whisk together the glaze ingredients in a small bowl.
  8. Once baked, poke holes in the top of the bread and pour the glaze over it.
  9. Allow to cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.

Notes

For a lighter version, consider using whole wheat flour, reducing sugar, or substituting for dairy-free options.
