- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 8 ounces fresh strawberries, hulled and chopped
- 3/4 cup milk
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1/2 teaspoon vanilla extract
- Juice of half a lemon (about 2 tablespoons)
- Zest of one lemon
- 1/4 cup granulated sugar (for glaze)
- Juice of half a lemon (about 2 tablespoons, for glaze)
- 2 tablespoons warm water (for glaze)
Instructions
- Preheat your oven to 350°F (177°C).
- Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt. Gently toss in the chopped strawberries.
- In another bowl, whisk together the milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Spoon the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- While the bread bakes, whisk together the glaze ingredients in a small bowl.
- Once baked, poke holes in the top of the bread and pour the glaze over it.
- Allow to cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.
Notes
For a lighter version, consider using whole wheat flour, reducing sugar, or substituting for dairy-free options.
